Christmas Leftovers. 2 Ways to use them.

Hope you all had a fantastic Christmas or at least the best you could given the current pandemic restrictions. We had a small, quiet Christmas but that is how we like it anyway. We do have lots of leftovers and I made a couple of things over on my Instagram yesterday that people asked about so I have put it together in a blog post for you. All made from leftovers or cupboard ingredients. All easy because we have slaved away enough in the kitchen right?! I have an idea for one more dish which I may add to this post later on.

The Best Christmas Leftover Roll

We probably all have our own variation of this but do you all use the secret ingredient? It’s what makes it I promise.

Get your bread roll (I would usually go for a larger, crusty roll but pandemic so…). On the bottom layer in this order…cold gravy, YES THATS THE SECRET INGREDIENT, turkey or chicken, stuffing, Cranberry sauce. That’s it. So simple yet so amazing. Serve with chips and leftover honey roast parsnips. Enjoy this taste sensation!

Lazy Leftover Chicken Curry

There are no hard and fast rules as to what you put into this. I just look in my fridge to see what else I can use up to bulk it out a bit. Yesterday I used:

  • Leftover chicken
  • Tomatoes
  • Mushrooms
  • An onion
  • 1/2 tin chopped tomatoes
  • Jar of Balti sauce (usually I make my own curry sauce but as I said this is lazy leftovers)
  • Garam masala spice

I chopped the fresh tomatoes, mushrooms and onion and fried them in a little oil. I added the spice blend from the jar of curry and waited until everything had softened. Next I added the chicken and the jar of sauce. It was a bit on the dry side which is why a added the tin tomatoes and a bit of water. The extra Garam masala spice went in last if all. I let it simmer for about 15 mins. Served with rice and chips. There were also some Indian selection buffet leftovers in the fridge from Christmas day and I reheated those to go with it. Sadly I didn’t have any mango chutney as that would have gone down a treat!
