One of our favourite things to do as a family for Halloween is carve the pumpkins. Last year we made pumpkin slime out of the guts. Or rather we failed but it was still a fun activity. I hate wasting food so need to do something useful with the carving leftovers.
This year we made Pumpkin Pie and we will be toasting the pumpkin seeds as they are a delicious snack. As you know I am a lazy baker so had to use the easiest recipe. If I could have found pre made sweet pastry cases I would have used them but I couldn’t so improvised and just used regular shortcrust pastry. When I talk about Pumpkin I just use the actual flesh and not the stringy guts.
Ingredients
- Pumpkin flesh
- Condensed milk 1 can (397g)
- 2 eggs
- 1/2 tsp ground nutmeg
- 1/2 tsp ground cinnamon
- 1/2 tsp ground ginger
- Shortcrust sweet pastry case
Method
Preheat oven gas 5. Boil the pumpkin flesh for 15 mins. When soft place into large sieve and remove excess water. Puree and leave to cool. When cool add remaining ingredients and stir together. Pour into pastry case and cook in centre of oven for approx 30 minutes or until set and cooked through.
Also don’t waste those seeds. Toast them with a bit of garlic salt. They are a tasty snack. We are going to keep some aside to dry and give to the hamster too! So very little is wasted.
